Pork Tenderloin with Green Chili

1 Bread pan
2 tbsp olive oil
1 Pork tenderloin
1/2 a large onion
3 cloves of garlic
3 - 5 roast and peeled hatch green chilis

1 can of diced tomatoes and green chilies
2 tbsp BBQ sauce
1 tbsp horsey sauce
salt and pepper to taste
1 can enchilada sauce
2 tsp cilantro
Preheat oven to 425 degrees. Put Olive oil in pan, set aside. Cut Pork into medium pieces, season with salt and pepper. Chop onion, garlic, hatch green chilies, and cilantro.
 Mix Pork, onion, garlic, hatch green chilies, can of diced tomatoes and green chilies, in bread pan making sure that all ingredients get evenly coated with oil.
 Add BBQ sauce and Horsey sauce to the mixture. Mix well.
 Top with can of enchilada sauce and sprinkle cilantro leaves over it. Place in preheated oven.
 Cook at 425 degrees for 1 hour and 15 min. Ready to serve after internal temp. of meat has reached 165 degrees. I serve with a flour tortilla and corn.
